Caramel Production Process
This is a continuous process system that produces high quality caramel that is mixed with popcorn to produce caramel corn. Thin film evaporator tubes reduce the moisture content of the premixed, flavored, sugar solution, using high pressure steam. Variable speed positive displacement pumps control the product flow based on the discharge temperature. The finished product is mixed with the popcorn in a steam jacketed mixing screw enclosure. Lecithin is injected into the mixing screw enclosure to prevent the product from sticking to the surfaces. Various types of nuts may also be added to the product as it is mixed with the popcorn.
